Games that use dice and the dice themselves date back to the Middle Eastern Crusades, but current craps is approximately 100 years old. Modern craps formed from the ancient Anglo game called Hazard. No one absolutely knows the beginnings of the game, although Hazard is said to have been discovered by the Anglo, Sir William of Tyre, around the 12th century. It’s theorized that Sir William’s horsemen enjoyed Hazard through a blockade on the fortification Hazarth in 1125 AD. The title Hazard was acquired from the citadel’s name.
Early French settlers brought the game Hazard to Canada. In the 18th century, when exiled by the English, the French moved down south and found sanctuary in the south of Louisiana where they a while later became Cajuns. When they left Acadia, they took their best-loved game, Hazard, with them. The Cajuns broke down the game and made it mathematically fair. It’s said that the Cajuns changed the title to craps, which is acquired from the term for the losing throw of snake-eyes in the game of Hazard, referred to as "crabs."
From Louisiana, the game extended to the Mississippi scows and across the country. A good many consider the dice maker John H. Winn as the creator of current craps. In 1907, Winn built the modern craps layout. He appended the Don’t Pass line so gamblers can bet on the dice to not win. Later, he developed the spots for Place bets and added the Big 6, Big 8, and Hardways.
